I am so excited to share my first (and hopefully not my last) recipe video today for a perfect roast chicken. Last week I had the privilege and pleasure of working with my dear friend Amanda Odmark. She is a gifted holistic wellness counselor and one of the most intuitive people I know. And to top it off, her sweet husband Mike shot and created this stunning video!
Amanda is, as you can imagine, very conscious about what she eats and doesn’t eat a lot of meat. She shared with me recently that she felt her body was asking her for a little more meat and wasn’t sure where to start. I told her that I needed to teach her how to make a roast chicken because it would turn even a chicken hater into a chicken lover. It’s simple, easy and comes out moist and delicious every time. So we embarked on this little experiment and decided to make a video to share with you all. And guess what? She absolutely loved the chicken, and I imagine, will be making it very soon.

And as always, I encourage you to get as many of the ingredients locally. I made sure to grab a local chicken that was free from hormones and antibiotics, organic and local potatoes, local carrots, local heirloom celery, garlic and butter. Delish!
