Veggie Popsicles


This weekend confirmed the fact that summer is most definitely here. With temperatures rising into the high 90′s there are very few things that can be as refreshing as a cold popsicle. With store bought popsicles ingredients of 90% water, sugar, corn syrup, gum, and of course red #40, blue #1,red #3, yellow #5 and a whole host of other unrecognizable chemical ingredients there has got to be a better way. Perhaps you have great childhood memories of opening up a can of fruit juice concentrate, adding water, and freezing that into a cool summer treat. Adults are getting smarter, and realizing that adding veggies can be equally delicious, and much more nutritious. When it’s too hot for soup, use those left over veggies for a flavorful popsicle. Carrots, sweet potatoes, corn, spinach, zucchini, and even tomatoes will all work great. With the right combination, you can make the most amazing popsicles that will have your kids (and adults) begging for more.

Here are a few recipes:



  • 1 cup fresh or frozen strawberries
  • 1 cup shredded carrots
  • The juice of 2 oranges
  • The juice of 3 limes
  • 1 cup water
  • 1/4 cup cup honey
  • Pinch salt
  • 1 teaspoon vanilla


Blend all ingredients in a blender, preferably a Vita-Mix, pour into Popsicle makers and freeze for at least four hours, or until completely frozen.

To remove from Popsicle makers, run cool water over them for a few seconds until they can be easily removed.

Sweet Potato Popsicles:


  • 3 organic sweet potatoes
  • ¼ cup of organic apple juice (sub soy milk if you want it creamier)
  • 2 Tbsp of organic honey
  • ½ tsp of organic nutmeg or cinnamon (or both)


Preheat your oven to 350 degrees. Wash your sweet potatoes and cut in half. Place skin side down on a baking sheet and bake for 30 minutes or until fork tender. Remove from the oven and let cool. Scoop out the sweet potatoes and throw away the skin. In a blender, combine the sweet potatoes, apple juice, honey and spices. Puree until smooth. Add more apple juice if the mixture is too thick – you should be able to pour it. Pour into your popsicle mold and let freeze. Serve frozen and enjoy.

Electric Green Popsicles


• 3 ripe bananas
• 1 medium pineapple
• 2 cups spinach
• Water



Blend until smooth and pour into molds.

    Great ideas Mary!! We made strawberry/spinach popsicles a few weeks ago. They were great! I just used strawberries, spinach, and honey. We called them “Christmas Popsicles” since they were red and green. :)

      So cute! Love that idea. It’s amazing how simple it is to add vegetables and you don’t sacrifice the taste, and a great activity to show kids how to eat healthy even with sweets.

    When you use spinach do you just use it raw or do you steam it?

      Hi Dana,
      You could do it either way. In fact, a great idea is to juice your spinach beforehand and treat is like any other juice and make popsicles.
